[edit] Compatible Ethernet adapters:
The only unofficial USB ethernet adapter known to work on Wii uses the Asix AX88772 chip.
Please inform about others products and chips compatible with Wii and which devices you have already tested negative.
I can confirm that I have a working adapter, bought in the UK at a local computer shop (cheap:), it is a "Vivanco - High Speed USB 2.0 Fast Ethernet Adapter". on the bottom it has "EDV-NR.12272" and the serial is "S/N:GW060100382". I only tried it in the Wii because I saw a photo of the Airlink ASOHOUSB and it is exactly the same shape, a power and link light on the top, etc. I'm guessing this is the UK/Euro version of the same product. Anyway, it works, the Wii picked up a DHCP address straight away and then auto-downloaded an update in about 10 secs! I'm chuffed, and so hurry up and get one before they double the price. In Europe the KINAMAX-RJ45 Adapter is not available. So I searched for other devices with this chip.
It seems the following USB ethernet adapters uses the same chip too, needs check:

[edit] Online Hardware Vendors
Currently, Newegg.com has stopped selling the working KINAMAX-RJ45 Adapter and instead are selling the incompatible updated version. TigerDirect.com lists a Sabrent USB RJ45 Adapter that looks exactly like the Kinamax Adapter (in fact a search for 'Kinamax' will yield this item), however, the product you will receive is the same updated incompatible adapter and will not work with the Wii. I tested two other adapters from tiger, and none work with the Wii. As of February 2007, Newegg.com and Tigerdirect.com do not sell a Wii compatible ethernet adapter, and I can't find any online retailer that does.

The Official Wii Ethernet Adapter from Nintendo can be used with most OSes. Just Download the Asix AX88772 Drivers for your Operating System and use them to use the Wii Ethernet Adapter as a standard 10/100 MBit/s Ethernet Device.
