Has anyone cut apart and opened a nunchuck/classic controler? Would it be possible to cut the end off a classic controler or nunchuck and use something else? Maybe use a N64 controler instead of the classic controler? An Atari joystick instead of a nunchuck?

They have been disassembled, see:

No, a simple wire splice to another controller will not work. Both have chips inside to communicate with the Wiimote.
